Arrosticini and the Best Place to Get It!

Arrosticini is one of the most popular dishes in Italy but you can only find it in Abruzzo!  One of my first visits to Abruzzo led me to this amazing dish.  The B&B owner where I was staying invited me out to dinner to one of the local restaurants (mentioned at the end of the article) where I first tasted these delicious salted lamb skewers.  Now, I've lived in the middle east for 20 years so I recognized the kebob but let me assure you it was like nothing I've tasted before.

What is Arrosticini?
Arrosticini are a type of traditional Abruzzese cuisine from the Italian region of Abruzzo. It is typically made from lamb, cut in small pieces and pierced by a skewer. It is cooked on a brazier which resembles a gutter with its elongated shape where the skewers are lined over the coals.  The lamb is salted only after cooking and before serving. ​

How To Do it Yourself
​You can purchase a Arrosticini Cube to make 100 perfectly cut skewers to just pop onto the grill.  Just layer lamb slices along with layers of lamb fat, place the skewers into the holes then cut and you're ready to go.

But if you'd like to have the professionals do it, visit the best restaurant in the Peligna Valley and let them do the work so you can just enjoy the flavor.  
Il Carro Restaurant in Pratola Peligna is in my opinion the best place to eat arrosticini.  Call ahead because it is usually packed with hungry patrons.  Oh and if you're in the mood for pasta- the house specialty is the Pappardelle with mushrooms. bacon and truffles!  Absolutely to die for!
